Impact of Humidity on Water Dynamics and Electrical Conductivity in PEDOT:PSS/Cellulose Nanofibril Nanocomposite Films: Insights from Quasi-Elastic Neutron Scattering
Macromolecules 58(5), 2247 - 2258 () [10.1021/acs.macromol.4c02412]
The water dynamics in a nanocomposite film thatconsists of the electrically conductive poly(3,4-ethylenedioxythiophene):poly(styrenesulfonate) (PEDOT:PSS) and cellulosenanofibrils (CNFs) have been investigated during three cyclesof exposure to low and high relative humidity (RH = 5% and 85%,respectively) using quasi-elastic neutron scattering (QENS). Theobtained dynamical structure factors are transformed into theimaginary part of the dynamic susceptibility to better differentiatebetween the individual relaxation processes. [...]

Impact of roasting, high-pressure homogenization, and alkaline pH-shifting on hemp seed protein functionality
Hemp seed proteins have garnered significant research attention in recent years; however, the poor functional properties of hemp protein limit their use in many industrial applications. In this study, we investigate the effects of roasting, high-pressure homogenization, and alkaline pH-shifting on hemp protein structure and functional properties. [...]

Wet spinning of sodium carboxymethyl cellulose–sodium caseinate hydrogel fibres: relationship between rheology and spinnability
Soft matter 22, 10.1039.D4SM00705K () [10.1039/D4SM00705K]
Mimicking the fibrous structures of meat is a significant challenge as natural plant protein assemblies lack the fibrous organisation ubiquitous in mammalian muscle tissues. In this work, wet-spun hydrogel fibres resembling the anisotropic fibrous microstructure of meat are fabricated using carboxymethyl cellulose as a model polysaccharide and sodium caseinate as a model protein which are crosslinked using 1-ethyl-3-(3-dimethylaminopropyl)carbodiimide (EDC). [...]

A high-frequency artificial nerve based on homogeneously integrated organic electrochemical transistors
Artificial nerves that are capable of sensing, processing and memory functions at bio-realistic frequencies are of potential use in nerve repair and brain–machine interfaces. n-type organic electrochemical transistors are a possible building block for artificial nerves, as their positive-potential-triggered potentiation behaviour can mimic that of biological cells. [...]

Paramagnetic fluctuations of the magnetocaloric compound MnFe 4 Si 3
An inelastic neutron scattering technique is employed to investigate the paramagnetic spin dynamics in a single-crystalline sample of the magnetocaloric compound MnFe4Si3. In the investigated temperature range, 1.033 x TC to 1.5 x TC , where TC is the Curie temperature, the spin fluctuations are well described by the ferromagnetic Heisenberg model predictions. [...]
